Originating in the highlands of Loja, Ecuador, this single-origin coffee is grown at altitudes between 1,800 and 2,000 meters , where the cooler temperatures and rich volcanic soil create a highly complex profile. The beans are processed with honey, allowing the natural sugars to enrich the cup with intense sweetness and a smooth body.
Roasted to a medium-soft level, The Covenant reveals comforting layers of caramel, warm walnut, and creamy milk chocolate : a smooth yet meaningful cup, perfect for espresso, pour-over, or drip coffee.
Beyond exceptional flavor, The Covenant represents a deeper commitment. Our farmers cultivate coffee using sustainable agroforestry practices, planting native trees alongside the coffee plants to reduce erosion, improve water retention, and preserve local biodiversity. Through natural composting and organic fertilizers, they ensure a thriving ecosystem that nourishes both the land and the communities that inhabit it.
